1.In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown it on all sides. Remove the meat from the pot and set it aside.

2.In the same pot, add the diced onion, minced garlic, bell peppers, and jalapeno peppers. Sauté until the vegetables are softened.

3.Add the chili powder, ground cumin, and dried oregano to the pot. Stir well to coat the vegetables with the spices.

4.Return the browned beef stew meat to the pot. Add the diced tomatoes and beef broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, or until the meat is tender.

5.Add the diced potatoes and corn kernels to the pot. Continue simmering for an additional 30 minutes, or until the potatoes are cooked through.
