Preparation

1.Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the sliced bell peppers and diced tomatoes to the pot. Cook for 5 minutes, until the vegetables start to soften.

4.Stir in the tomato paste, paprika, dried oregano, dried thyme, and bay leaves. Cook for another minute to release the flavors.

5.Return the beef to the pot and pour in the beef broth and red wine. Season with salt and pepper to taste.

6.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the beef is tender.

7.Add the Kalamata olives to the pot and simmer for an additional 10 minutes.

8.Serve the Greek-style Gulyás hot, garnished with crumbled feta cheese.
