Preparation

1.In a large pot, heat some oil over medium heat. Add the sliced onions and minced garlic, and sauté until golden brown.

2.Add the beef brisket slices to the pot and cook until browned on all sides.

3.Stir in the Hungarian paprika, caraway seeds, and cinnamon stick, and cook for another minute to release their flavors.

4.Pour in the beef broth and water, and bring the mixture to a boil. Reduce the heat and let it simmer for about 1 hour, or until the beef is tender.

5.While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

6.Once the beef is tender, remove it from the pot and shred it into bite-sized pieces. Return the shredded beef to the pot.

7.Add the julienned carrot, parsnip, and red bell pepper to the pot, and simmer for an additional 5 minutes until the vegetables are tender.

8.Season with salt and pepper to taste.

9.To serve, divide the cooked rice noodles among bowls and ladle the hot Hungarian-style beef pho over the noodles. Garnish with fresh parsley.
