Preparation

1.In a large mixing bowl, combine the flour and salt. Add the chilled butter cubes and mix until the mixture resembles coarse crumbs.

2.In a separate small bowl, mix together the fennel seeds, ground ginger, ground cardamom, ground cinnamon, ground cloves, and ground black pepper.

3.Gradually add the spice mixture to the flour and butter mixture, mixing well.

4.Slowly add the cold water, a little at a time, until the dough comes together. Knead the dough gently until it forms a smooth ball.

5.Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

6.Preheat the oven to 200°C (400°F).

7.On a lightly floured surface, roll out the chilled dough into a rectangle, about 1/4 inch thick.
