1.Heat the vegetable oil in a large skillet over medium heat.

2.Add the plantain slices to the skillet and fry until golden brown and crispy, about 3-4 minutes per side. Remove from the skillet and set aside.

3.In the same skillet, crack the eggs and cook until the whites are set but the yolks are still runny, about 2-3 minutes.
