Treat your ingredients with care...

  • Plantains — Make sure the plantains are ripe but still firm for the best texture. Overly ripe plantains may become mushy when fried.

Tips & Tricks

  • For an extra kick of heat, add a few dashes of hot sauce or sprinkle some chopped scotch bonnet peppers over the eggs.
  • Serve with a side of fresh salsa or sliced avocado for added freshness.
  • If you prefer your eggs fully cooked, simply cook them for a few more minutes until the yolks are no longer runny.
  • Experiment with different Jamaican spice blends to customize the flavor profile of the dish.
  • Feel free to add some sautéed bell peppers or onions for additional flavor and texture.
