1.In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

3.Drain the soaked beans and add them to the pot along with the sauerkraut, diced potatoes, bay leaf, dried thyme, and paprika. Stir well to combine.

4.Pour in the vegetable or meat broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the beans and potatoes are tender.
