Preparation

  1. 1.
In a bowl, combine the yogurt, lemon juice, minced garlic, ground saffron, turmeric, black pepper, and salt. Mix well.
  2. 2.
Add the beef strips to the marinade and coat them evenly. Cover the bowl and refrigerate for at least 2 hours, allowing the flavors to meld.
  3. 3.
Preheat the grill to medium-high heat.
  4. 4.
Thread the marinated beef strips onto skewers, leaving a small space between each piece.
  5. 5.
Grill the kababs for about 4-5 minutes per side, or until they are cooked to your desired level of doneness.
  6. 6.
Meanwhile, rinse the basmati rice under cold water until the water runs clear. Drain the rice.
  7. 7.
In a pot, bring the water to a boil. Add the drained rice, butter, saffron threads, and salt. Stir well.
  8. 8.
Reduce the heat to low, cover the pot, and let the rice simmer for about 15-20 minutes, or until the rice is cooked and fluffy.
  9. 9.
Serve the grilled beef kababs alongside the saffron rice.

Treat your ingredients with care...

  • Beef tenderloin — For the best results, choose a high-quality cut of beef tenderloin with minimal fat. This will ensure tender and juicy kababs.
  • Saffron threads — To enhance the flavor and aroma of saffron, soak the threads in a tablespoon of warm water for a few minutes before adding them to the rice.

Tips & Tricks

  • If you don't have access to a grill, you can also cook the kababs on a stovetop grill pan or broil them in the oven.
  • Marinating the beef for a longer period, such as overnight, will result in even more flavorful kababs.
  • Serve the kababs with a side of grilled vegetables or a fresh salad for a complete meal.
