Preparation

1.In a large bowl, combine the ground meat, chopped onion, minced garlic, turmeric, cumin, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

2.Shape the meat mixture into small patties, about 2 inches in diameter.

3.Preheat the grill to medium-high heat. Brush the grill grates with vegetable oil to prevent sticking.

4.Place the kebabs on the grill and cook for about 4-5 minutes per side, or until they are cooked through and slightly charred.

5.Meanwhile, rinse the basmati rice under cold water until the water runs clear. In a separate bowl, soak the saffron threads in hot water for 10 minutes.

6.In a large pot, bring water to a boil and add salt. Add the rinsed rice and cook for about 5 minutes, or until it is parboiled. Drain the rice.

7.In the same pot, layer half of the parboiled rice, followed by half of the saffron water. Repeat the layers with the remaining rice and saffron water.

8.Cover the pot with a tight-fitting lid and cook over low heat for about 20-25 minutes, or until the rice is fully cooked and fluffy.

9.Serve the grilled kebabs alongside the saffron rice.
