Treat your ingredients with care...
- Lamb or beef — For a more tender and flavorful meat, marinate it in olive oil, lemon juice, and Greek herbs for a few hours before cooking.
- Bell peppers — Roasting the bell peppers before adding them to the stew will enhance their sweetness and add a smoky flavor.
- Potatoes — To prevent the potatoes from becoming mushy, add them to the stew during the last 30 minutes of cooking.
Tips & Tricks
- For an extra burst of flavor, garnish the Kalja with freshly chopped parsley and a drizzle of extra virgin olive oil before serving.
- Serve the Kalja with a side of crusty bread to soak up the delicious broth.
- If you prefer a thicker stew, mix a tablespoon of cornstarch with a little water and add it to the pot during the last few minutes of cooking.
