Preparation

1.In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.

2.In a large mixing bowl, combine the flour, chopped walnuts, salt, ground cinnamon, ground nutmeg, orange zest, and lemon zest.

3.Make a well in the center of the dry ingredients and pour in the yeast mixture, honey, and olive oil.

4.Mix the ingredients together until a dough forms.

5.Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

6.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

7.Preheat the oven to 180°C (350°F).

8.Punch down the risen dough and shape it into a loaf.

9.Place the loaf on a baking sheet lined with parchment paper and let it rise for another 30 minutes.

10.Bake the bread in the preheated oven for 30-35 minutes or until golden brown and sounds hollow when tapped on the bottom.
