Preparation
-
1.Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
-
2.Drain the soaked rice and transfer it to a steamer lined with cheesecloth. Steam the rice over medium heat for 25-30 minutes, or until it becomes tender and sticky.
-
3.In a saucepan, combine the coconut milk, sugar, salt, and pandan leaves (if using). Heat the mixture over medium heat until it comes to a gentle simmer. Stir occasionally to dissolve the sugar.
-
4.Remove the pandan leaves from the coconut milk mixture. Pour half of the coconut milk mixture over the steamed rice and gently fold it in using a wooden spoon. Let the rice absorb the coconut milk for 10 minutes.
-
5.Serve the sticky rice on a plate or in a bowl, topped with the sliced mangoes. Drizzle the remaining coconut milk mixture over the mangoes. Sprinkle with toasted sesame seeds for added crunch and flavor.
Treat your ingredients with care...
- Glutinous rice — Make sure to rinse the rice thoroughly to remove excess starch before soaking. This will help achieve the desired sticky texture.
- Pandan leaves — If you can't find pandan leaves, you can substitute with a few drops of pandan essence or omit it altogether. The pandan leaves add a subtle fragrance to the coconut milk.
Tips & Tricks
- Soaking the rice overnight will yield the best results in terms of texture.
- When steaming the rice, make sure to line the steamer with cheesecloth to prevent the rice from sticking to the bottom.
- To enhance the flavor, you can add a pinch of salt to the coconut milk mixture.
