Preparation

1.Heat a wok or large skillet over medium-high heat. Add the chopped bacon and cook until crispy. Remove the bacon from the pan and set aside.

2.In the same pan, add the vegetable oil and minced garlic. Stir-fry for a minute until fragrant.

3.Add the diced chicken or shrimp to the pan and cook until they are no longer pink.

4.Push the chicken or shrimp to one side of the pan and add the diced carrots, bell peppers, and corn kernels. Stir-fry for a few minutes until the vegetables are slightly tender.

5.Push the vegetables to one side of the pan and add the cooked jasmine rice to the other side. Break up any clumps of rice with a spatula and stir-fry for a few minutes to heat through.

6.In a small bowl, whisk together the soy sauce, oyster sauce, ketchup, sugar, and chili flakes. Pour the sauce over the rice and stir-fry for another minute to evenly coat the rice and ingredients.

7.Add the cooked bacon back into the pan and stir to combine.

8.Remove from heat and garnish with chopped green onions and fresh cilantro.
