Preparation

1.In a large mixing bowl, combine the all-purpose flour, Bhutanese red rice flour, salt, and sugar for the dough.

2.In a separate small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.

3.Add the yeast mixture and vegetable oil to the dry ingredients. Mix until a dough forms.

4.Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

5.Meanwhile, prepare the filling. In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

6.Add the ground pork to the skillet and cook until browned. Stir in the red chili powder, ground cumin, ground turmeric, salt, and black pepper. Cook for an additional 2 minutes. Remove from heat and let the filling cool.

7.Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

8.Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a small circle.

9.Place a spoonful of the cooled filling in the center of each dough circle. Sprinkle grated yak cheese (or cheddar) on top of the filling.

10.Fold the dough over the filling, sealing the edges to form a crescent shape. Place the filled klobasneks on the prepared baking sheet.

11.Bake for 20-25 minutes or until the klobasneks are golden brown.

12.Remove from the oven and let them cool for a few minutes before serving.
