Ingredients
In this Andhra-style adaptation, we have incorporated the distinct flavors of Andhra cuisine. The original Swedish Knäck is typically made with almonds and does not include any spices. However, our version uses peanuts as the main ingredient and adds a kick of spice with the inclusion of red chili powder. Preparation

1.Heat a pan over medium heat and dry roast the peanuts until they turn golden brown. Remove from heat and set aside.

2.In a separate pan, combine sugar and water. Cook over medium heat until the sugar dissolves and the mixture reaches a syrupy consistency.

3.Add tamarind paste, red chili powder, salt, and ghee to the sugar syrup. Stir well to combine.

4.Add the roasted peanuts to the syrup mixture and mix until all the peanuts are coated evenly.

5.Sprinkle baking soda over the mixture and quickly stir to incorporate. The mixture will foam up.

6.Pour the mixture onto a greased surface or a parchment-lined baking sheet. Use a greased spatula to spread it evenly.

7.Allow the brittle to cool and harden completely. Once cooled, break it into small pieces.
