Preparation

1.In a large mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add the warm water and olive oil, and mix until a soft dough forms.

2.Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes smooth and elastic.

3.Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

4.Meanwhile, prepare the filling by combining the chopped anchovies, olives, feta cheese, parsley, rosemary, thyme, minced garlic, and olive oil in a bowl. Mix well to combine.

5.Preheat the oven to 200°C (400°F).

6.Punch down the risen dough and divide it into two equal portions. Roll out each portion into a rectangular shape, about 1cm (0.4 inches) thick.

7.Spread half of the filling mixture evenly over one of the dough rectangles, leaving a small border around the edges. Place the other dough rectangle on top and press the edges to seal.

8.Transfer the stuffed bread onto a baking sheet lined with parchment paper. Brush the top with olive oil and sprinkle with a pinch of salt.

9.Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown and cooked through.
