Preparation

  1. 1.
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. 2.
In a large bowl, combine the ground almonds, powdered sugar, egg whites, and vanilla extract. Mix until a smooth dough forms.
  3. 3.
Divide the dough into small portions and roll each portion into long ropes, about 1.5cm (1/2 inch) thick.
  4. 4.
Shape the ropes into rings of decreasing size, starting with the largest on the bottom and ending with the smallest on top. Place the rings on the prepared baking sheet.
  5. 5.
Bake for 12-15 minutes, or until the rings are golden brown. Allow them to cool completely on a wire rack.
  6. 6.
Once cooled, stack the rings on top of each other, securing them with icing sugar between each layer.
  7. 7.
Decorate the cake with icing sugar and silver balls for an elegant finish.

Treat your ingredients with care...

  • Almonds — Make sure to use ground almonds for the dough to achieve the desired texture. Avoid using almond flour, as it may result in a different consistency.

Tips & Tricks

  • To prevent the dough from sticking to your hands while shaping the rings, lightly dust your hands with powdered sugar.
  • If the dough becomes too sticky, refrigerate it for 15 minutes before continuing with the shaping process.
  • For a festive touch, you can drizzle melted chocolate over the finished cake before decorating with icing sugar and silver balls.
