Ingredients

In this adaptation of the Swedish dish Kroppkaka, we have incorporated Turkmen flavors and spices to create a unique and delicious dish. The original dish typically uses a filling of pork and onions, while our Turkmen Kofta recipe uses a mixture of minced lamb or beef, onions, and traditional Turkmen spices. Additionally, the cooking technique has been modified to boil the dumplings instead of baking them, as is done in the original recipe. We alse have the original recipe for Kroppkaka, so you can check it out.

Preparation

  1. 1.
In a large mixing bowl, combine the flour and salt for the dough. Gradually add water and knead until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. 2.
In a separate bowl, mix together the minced lamb or beef, chopped onion, ground cumin, paprika, salt, and pepper until well combined.
  3. 3.
Take a small portion of the dough and roll it into a ball. Flatten the ball with your hands or a rolling pin to form a small disc.
  4. 4.
Place a spoonful of the meat filling in the center of the disc. Fold the edges of the dough over the filling, sealing it tightly to form a dumpling shape. Repeat with the remaining dough and filling.
  5. 5.
Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for about 10-12 minutes, or until they float to the surface and are cooked through.
  6. 6.
Remove the cooked dumplings from the water using a slotted spoon and transfer them to a serving dish.
  7. 7.
Serve the Turkmen Kofta hot, drizzled with yogurt or melted butter.

Treat your ingredients with care...

  • Minced lamb or beef — Make sure to use lean meat for a healthier option. You can also mix lamb and beef for a more flavorful filling.
