Preparation

1.Preheat the oven to 220°C (425°F).

2.In a large skillet, heat the Cretan olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon.

4.Stir in the chopped tomatoes, tomato paste, ground cumin, ground coriander, paprika, dried oregano, dried thyme, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.

5.Place the pizza dough rounds on a baking sheet. Spread the lamb mixture evenly over the dough, leaving a small border around the edges.

6.Sprinkle the crumbled Cretan cheese over the lamb mixture.

7.Bake in the preheated oven for 10-12 minutes, or until the dough is golden and crispy.

8.Remove from the oven and garnish with fresh parsley.
