Preparation

1.In a large bowl, combine the flour, instant yeast, sugar, and salt for the dough. Gradually add the warm water and knead until a smooth and elastic dough forms. Cover the bowl with a clean kitchen towel and let it rise for 1 hour in a warm place.

2.In the meantime, prepare the meat mixture. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the ground lamb and beef to the skillet, and cook until browned. Stir in the tomato paste, chopped tomatoes, parsley, cumin, paprika, cinnamon, black pepper, and salt. Cook for an additional 5 minutes, allowing the flavors to meld together. Remove from heat and set aside.

4.Preheat the oven to 220°C (425°F). Divide the dough into 6 equal portions and roll each portion into a thin circle.

5.Place the rolled dough circles on a baking sheet lined with parchment paper. Spread a generous amount of the meat mixture on top of each dough circle, leaving a small border around the edges.

6.Bake the Lahmacun in the preheated oven for 10-12 minutes, or until the edges are golden and crispy.
