Treat your ingredients with care...

  • Almonds — Make sure to use ground almonds for this recipe to achieve the desired texture. If you can't find ground almonds, you can grind whole almonds in a food processor until finely ground.
  • Saffron — To extract the maximum flavor from saffron, steep the threads in warm water for a few minutes before adding them to the batter. This will help release the vibrant color and aroma of the spice.

Tips & Tricks

  • For an extra burst of flavor, you can add a teaspoon of lemon zest to the batter.
  • Serve the Andalusian Lattacciolo with a dollop of whipped cream or a scoop of vanilla ice cream for a decadent dessert.
  • If you prefer a more intense saffron flavor, you can increase the amount of saffron threads slightly.
