1.In a large pot, combine the water, salt, Sichuan peppercorns, ginger, and star anise. Bring to a boil.

2.Add the pork belly to the pot and simmer for 1 hour or until tender.

3.Remove the pork belly from the pot and let it cool completely.

4.Heat vegetable oil in a deep-fryer or large pan to 180°C (350°F).

5.Carefully lower the pork belly into the hot oil and fry until the skin is golden and crispy, about 10-15 minutes.
