Preparation

1.Heat coconut oil in a large pan over medium heat.

3.Add the bell peppers and zucchinis, and sauté until slightly softened.

4.Stir in the diced tomatoes, coconut milk, pineapple chunks, lime juice, paprika, turmeric, salt, and pepper.

5.Reduce the heat to low and simmer for 15-20 minutes, until the vegetables are tender and the flavors are well combined.
