Ingredients

In this adaptation, we have incorporated the flavors and ingredients commonly found in North Karnataka cuisine. The original Italian dish is typically made with olive oil, garlic, and chili flakes, whereas our North Karnataka Style Date Linguine incorporates local spices like red chili powder, turmeric, and garam masala. Additionally, we have replaced the traditional Italian herbs with fresh cilantro for a touch of North Karnataka freshness. We alse have the original recipe for Linguine ai datteri, so you can check it out.

Treat your ingredients with care...

  • Dates — Make sure to use fresh and soft dates for the best flavor and texture. If your dates are dry, soak them in warm water for 10 minutes before chopping and using in the recipe.

Tips & Tricks

  • For an extra kick of heat, add a pinch of North Karnataka's famous red chili powder.
  • Adjust the sweetness and spiciness according to your taste preferences by adding more or fewer dates and red chili powder.
  • Serve the linguine immediately after tossing with the sauce to ensure the pasta stays hot and the flavors are at their best.
  • If you prefer a smoother sauce, you can blend the cooked onion, tomato, and date mixture before adding it to the linguine.
