Ingredients
In this Emirati adaptation of the Ecuadorian Locro de papa, we incorporate traditional Emirati spices such as cumin, coriander, and turmeric to infuse the stew with the flavors of the United Arab Emirates. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

2.Add the ground cumin, ground coriander, ground turmeric, and saffron threads to the pot. Stir well to coat the onions and garlic with the spices.

3.Add the diced potatoes to the pot and stir to combine with the spices.

4.Pour in the vegetable broth and season with salt to taste. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the potatoes are tender and cooked through.

5.Once the potatoes are cooked, use a potato masher or the back of a spoon to partially mash some of the potatoes, creating a thicker consistency for the stew.

6.Serve the Emirati-style Potato Stew hot, garnished with fresh cilantro.
