Preparation

  1. 1.
Heat the olive oil in a large skillet over medium heat. Add the Luganega sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.
  2. 2.
In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. 3.
Add the Arborio rice to the skillet and stir to coat it with the onion and garlic mixture.
  4. 4.
Pour in the white wine and cook until it has evaporated.
  5. 5.
Gradually add the chicken or vegetable broth, about 1/2 cup at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.
  6. 6.
Stir in the dried thyme, dried oregano, salt, and pepper.
  7. 7.
Return the cooked Luganega sausage to the skillet and mix well with the rice.
  8. 8.
Cover the skillet and simmer for about 15-20 minutes, or until the rice is tender and has absorbed the flavors.
  9. 9.
Remove from heat and let it rest for a few minutes before serving.
  10. 10.
Garnish with fresh parsley and serve hot.
