Preparation

1.In a large mixing bowl, combine the ground beef, crushed coriander seeds, paprika, cumin, black pepper, salt, garlic powder, onion powder, chili powder, cloves, allspice, and cinnamon. Mix well until all the spices are evenly distributed throughout the meat.

2.If using natural hog casings, rinse them thoroughly under cold water and soak them in warm water for about 30 minutes to soften.

3.Stuff the spiced beef mixture into the casings using a sausage stuffer or a piping bag fitted with a large round tip. Twist the sausages into 4-5 inch links, or leave them as one long coil.

4.If not using casings, shape the spiced beef mixture into sausage patties or form it into a log shape.

5.Heat a grill or a skillet over medium heat. Cook the sausages for about 4-5 minutes per side, or until they are cooked through and nicely browned.
