In this adaptation, we have transformed the Italian Manzo alla California into a Jharkhandi-style Spiced Beef Curry. We have incorporated traditional Jharkhandi spices and flavors, such as mustard oil and garam masala, to give the dish an authentic taste. The cooking technique has also been modified to slow-cook the beef, allowing the flavors to develop and the meat to become tender. Preparation

1.In a bowl, combine the yogurt, turmeric powder, red chili powder, and salt. Add the beef cubes to the marinade and mix well. Let it marinate for at least 1 hour.

2.Heat mustard oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown.

3.Add the minced garlic and grated ginger to the pan and cook for another minute.

4.Add the marinated beef cubes to the pan and cook until they are browned on all sides.

5.Stir in the tomato puree and slit green chilies. Cook for 2-3 minutes.

6.Add garam masala and mix well. Cover the pan and let the curry simmer on low heat for about 1.5 to 2 hours, or until the beef is tender.

7.Garnish with fresh cilantro and serve hot with steamed rice or Indian bread.

- Mustard oil — Mustard oil adds a unique flavor to the dish. If you can't find mustard oil, you can substitute it with vegetable oil, but the flavor will be slightly different.
