While the original Greek Masourakia is a meat-based dish, this Swedish adaptation replaces the meat with lentils, making it a vegetarian-friendly option. The traditional Greek spices are substituted with Swedish herbs and spices, such as dill and parsley, to infuse the stew with a distinct Nordic flavor. 1.Rinse the lentils under cold water and drain.

2.In a large pot, heat some oil over medium heat. Add the onion, carrots, and celery, and sauté until softened.

3.Add the minced garlic, bay leaf, dried thyme, dried dill, and lentils to the pot. Stir well to combine.

4.Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 30-40 minutes, or until the lentils are tender.

5.In a separate bowl, whisk together the heavy cream, fresh dill, and lemon juice.

6.Once the lentils are cooked, remove the bay leaf and stir in the creamy dill sauce. Season with salt and pepper to taste.
