Treat your ingredients with care...
- Spinach — Make sure to thoroughly wash the spinach leaves and remove any tough stems before cooking.
- Phyllo pastry — Keep the phyllo pastry covered with a damp cloth while working with it to prevent it from drying out and becoming brittle.
- Feta cheese — Use a good quality feta cheese for the best flavor. If the feta is too salty, you can soak it in water for a few minutes to reduce the saltiness.
Tips & Tricks
- To achieve a crispier crust, brush each layer of phyllo pastry with melted butter generously.
- Serve the pie warm or at room temperature for the best taste and texture.
- If you prefer a milder flavor, you can substitute half of the feta cheese with ricotta cheese.
- Add a squeeze of lemon juice to the spinach and feta mixture for a tangy twist.
- Leftover pie can be refrigerated and reheated in the oven for a few minutes to regain its crispiness.
