Treat your ingredients with care...

  • Lamb — For the best results, choose lean cuts of lamb and trim any excess fat before cubing. This will ensure a tender and flavorful stew.
  • Omani spice blend — If you can't find a pre-made Omani spice blend, you can make your own by combining equal parts ground cinnamon, cardamom, cloves, and black pepper.
  • Canned chickpeas — Rinse the chickpeas thoroughly to remove any excess sodium and improve their texture in the stew.
  • Cilantro — If you're not a fan of cilantro, you can substitute it with fresh parsley for a milder herb flavor.

Tips & Tricks

  • For an extra burst of flavor, toast the Omani spice blend in a dry pan for a minute before marinating the lamb.
  • If you prefer a thicker stew, you can mash some of the chickpeas with a fork or blend a small portion of the stew before serving.
  • Adjust the level of spiciness by adding more or less Omani spice blend according to your taste preferences.
  • Leftovers can be refrigerated and enjoyed the next day, as the flavors tend to deepen and intensify over time.
  • Serve the Omani-inspired Topoi with a squeeze of fresh lemon juice for a tangy twist.
