In this Omani-inspired version of Topoi, we incorporate Omani spices and flavors to give the dish a distinct twist. The original Greek dish typically uses beef or lamb, but we enhance the flavor profile by marinating the lamb in a blend of Omani spices. Additionally, we incorporate traditional Omani ingredients such as chickpeas and aromatic spices to create a unique fusion of Greek and Omani cuisines. Preparation

1.In a bowl, combine the cubed lamb and Omani spice blend. Mix well to ensure the lamb is evenly coated. Let it marinate for at least 30 minutes.

2.Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

3.Add the marinated lamb to the pot and cook until browned on all sides.

4.Stir in the chickpeas, diced tomatoes, ground cumin, ground coriander, and ground turmeric. Season with salt and pepper to taste.

5.Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.

6.Serve the Omani-inspired Topoi hot, garnished with fresh cilantro. It pairs well with rice or flatbread.
