1.Preheat the oven to 200°C (400°F).

2.In a large bowl, toss the sweet potato wedges with olive oil, oregano, thyme, garlic powder, paprika, salt, and pepper.

3.Spread the sweet potato wedges in a single layer on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.

4.While the sweet potatoes are baking, prepare the fish. Season the fish fillets with salt and pepper.

5.Place the flour in a shallow dish, the beaten eggs in another shallow dish, and the breadcrumbs in a third shallow dish.

6.Dredge each fish fillet in the flour, shaking off any excess. Dip the fish fillet in the beaten eggs, then coat it in the breadcrumbs, pressing the breadcrumbs onto the fish to adhere.

7.Place the breaded fish fillets on a baking sheet lined with parchment paper.
