Preparation

1.Cook the egg noodles according to package instructions. Drain and set aside.

2.In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and golden brown.

3.Add the ground lamb or beef to the pan and cook until browned and cooked through.

4.Stir in the ground cumin, ground coriander, and ground turmeric, and cook for another minute to toast the spices.

5.Add the diced tomatoes, beef or lamb broth, tomato paste, soy sauce, tamarind paste, and brown sugar to the pan. Stir well to combine.

6.Bring the mixture to a simmer and let it cook for about 15-20 minutes, until the gravy thickens.

7.Season with salt to taste.

8.To serve, place a portion of cooked egg noodles in a bowl and ladle the hot gravy over the noodles.
