Preparation

  1. 1.
In a mixing bowl, combine the corn flour and water to make a soft dough. Knead well until the dough is smooth and pliable. Divide the dough into small portions and roll them into thin tortillas.
  2. 2.
Heat a skillet over medium heat and cook the tortillas until they are lightly browned on both sides. Set aside.
  3. 3.
In a separate pan, heat oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  4. 4.
Add the ginger-garlic paste and green chilies to the pan and cook for a minute. Then, add the chopped tomatoes and cook until they soften.
  5. 5.
Add the mashed potatoes, turmeric powder, red chili powder, garam masala, and salt to the pan. Mix well and cook for a few minutes until the flavors meld together.
  6. 6.
To assemble, place a fried tortilla on a plate and spread a generous amount of the spiced potato mixture on top. Repeat with the remaining tortillas and potato mixture.
  7. 7.
Garnish the Memela with fresh cilantro and serve hot with tamarind chutney.

Treat your ingredients with care...

  • Corn flour — Ensure that the corn flour is finely ground to achieve a smooth and pliable dough for the tortillas.
  • Tamarind chutney — Adjust the sweetness and tanginess of the chutney according to your preference by adding more or less tamarind pulp and sugar.

Tips & Tricks

  • For a spicier Memela, add more green chilies or red chili powder to the potato mixture.
  • You can add a squeeze of lemon juice to the potato mixture for a tangy twist.
  • Experiment with different toppings such as grated coconut, chopped onions, or fresh mint leaves for added flavor and texture.
  • If you prefer a healthier version, you can bake the tortillas instead of frying them.
  • Leftover Memela can be refrigerated and reheated in a skillet for a quick and delicious snack.
