Preparation

1.In a mixing bowl, combine the corn flour and water to make a soft dough. Knead well until the dough is smooth and pliable. Divide the dough into small portions and roll them into thin tortillas.

2.Heat a skillet over medium heat and cook the tortillas until they are lightly browned on both sides. Set aside.

3.In a separate pan, heat oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.

4.Add the ginger-garlic paste and green chilies to the pan and cook for a minute. Then, add the chopped tomatoes and cook until they soften.

5.Add the mashed potatoes, turmeric powder, red chili powder, garam masala, and salt to the pan. Mix well and cook for a few minutes until the flavors meld together.

6.To assemble, place a fried tortilla on a plate and spread a generous amount of the spiced potato mixture on top. Repeat with the remaining tortillas and potato mixture.

7.Garnish the Memela with fresh cilantro and serve hot with tamarind chutney.
