1.In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.

2.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

3.Preheat the oven to 180°C (350°F).

4.In a skillet, cook the diced bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the pan.

5.In the same skillet, add the sliced onions and cook until they become translucent and slightly caramelized.

6.Remove the dough from the refrigerator and roll it out on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled-out dough to the pie dish and press it gently into the bottom and sides.

7.Spread the cooked onions evenly over the dough, followed by the crispy bacon. Sprinkle the chopped thyme and rosemary over the filling. Season with salt and pepper to taste.

8.Fold the edges of the dough over the filling, creating a rustic crust.
