1.In a large mixing bowl, combine the mashed potatoes, flour, and egg. Knead the mixture until a smooth dough forms.

3.Cut each apricot in half, remove the pit, and fill the cavity with a teaspoon of granulated sugar. Close the apricot halves together.

4.Take one portion of the dough and flatten it into a small disc. Place an apricot in the center and carefully wrap the dough around it, sealing it completely.
