Preparation

  1. 1.
In a large mixing bowl, combine the mashed potatoes, flour, and egg. Knead the mixture until a smooth dough forms.
  2. 2.
Divide the dough into 12 equal portions and shape each portion into a small ball.
  3. 3.
Cut each apricot in half, remove the pit, and fill the cavity with a teaspoon of granulated sugar. Close the apricot halves together.
  4. 4.
Take one portion of the dough and flatten it into a small disc. Place an apricot in the center and carefully wrap the dough around it, sealing it completely.
  5. 5.
Repeat the process with the remaining dough and apricots.
  6. 6.
Bring a large pot of salted water to a boil. Gently drop the dumplings into the boiling water and cook for about 10 minutes or until they float to the surface.
  7. 7.
In a separate pan, melt the butter over medium heat. Add the breadcrumbs and cook until golden brown.
  8. 8.
Remove the dumplings from the water using a slotted spoon and transfer them to a serving dish.
  9. 9.
Drizzle the melted butter and breadcrumbs over the dumplings.
  10. 10.
Dust the dumplings with powdered sugar before serving.

Treat your ingredients with care...

  • Potatoes — Make sure to use starchy potatoes like Russet or Yukon Gold for the best texture in the dumplings.
  • Apricots — Choose ripe apricots that are slightly soft but still firm enough to hold their shape during cooking.

Tips & Tricks

  • To prevent the dumplings from sticking together, lightly dust them with flour before wrapping them around the apricots.
  • If you prefer a sweeter filling, you can add a sprinkle of cinnamon or a small amount of apricot jam to the sugar inside the apricots.
  • Serve the dumplings warm for the best taste and texture.
  • Leftover dumplings can be reheated by steaming or microwaving them briefly.
  • Experiment with different fruit fillings such as plums or peaches for a variation on this classic recipe.
