Ingredients
In this Cornish adaptation, the traditional Czech potato-based dough is used to encase the sweet apricots. Preparation

1.Mash the boiled potatoes until smooth and let them cool.

2.In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Knead the mixture until a smooth dough forms.

3.Divide the dough into 12 equal portions and flatten each portion into a circle.

4.Place an apricot in the center of each dough circle and carefully wrap the dough around it, sealing it completely.

5.Bring a large pot of salted water to a boil. Gently place the dumplings into the boiling water and cook for about 10 minutes or until they float to the surface.

6.In a separate pan, melt the butter over medium heat. Add the breadcrumbs and sugar, and cook until golden brown.
