1.Soak the dried white beans overnight in cold water. Drain and rinse.

2.In a large pot, cook the diced Cornish bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.

3.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

4.Add the soaked white beans, chopped tomatoes, tomato paste, Cornish honey, smoked paprika, dried thyme, salt, and pepper to the pot. Stir well to combine.

5.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 2 hours, or until the beans are tender and the sauce has thickened. Stir occasionally.

6.Once cooked, remove from heat and let the dish rest for a few minutes. Serve hot, garnished with fresh parsley.
