While the original Japanese dish uses agar agar as a gelling agent, we substitute it with gelatin to achieve a smoother texture. Additionally, we infuse the red bean paste with a hint of vanilla extract to add a touch of American flavor. Preparation

    Rinse the adzuki beans under cold water and place them in a large saucepan. Add 4 cups of water and bring to a boil. Reduce the heat to low and simmer for 1 hour or until the beans are tender.

    Drain the cooked adzuki beans and transfer them to a blender or food processor. Blend until smooth.

    Return the blended adzuki beans to the saucepan and add the sugar. Cook over medium heat, stirring constantly, until the mixture thickens and becomes a paste-like consistency. Remove from heat and stir in the vanilla extract.

    In a separate bowl, sprinkle the gelatin powder over the cold water and let it sit for 5 minutes to bloom.

    Place the gelatin mixture in a saucepan and heat over low heat, stirring constantly, until the gelatin is completely dissolved.
