Ingredients

In this Bengali adaptation of the French Mousse au caramel, we replace the traditional French ingredients like cream and eggs with yogurt, which is a staple in Bengali cuisine. The steaming technique used in Bengali desserts, known as "bhapa," is employed to create a silky smooth texture. Additionally, the flavors are adjusted to suit the Bengali palate, with a touch of cardamom and saffron added for a hint of aromatic warmth. We alse have the original recipe for Mousse au caramel, so you can check it out.

Treat your ingredients with care...

  • Yogurt — Use plain, full-fat yogurt for the best results. Greek yogurt can also be used for a thicker consistency.
  • Saffron — Soak the saffron strands in a tablespoon of warm milk for a few minutes before adding to the mixture to enhance the flavor and color.

Tips & Tricks

  • Make sure to whisk the yogurt and sugar mixture until the sugar is completely dissolved for a smooth texture.
  • To check if the bhapa doi is set, gently shake the bowls. The center should jiggle slightly but not be liquidy.
  • For a richer flavor, you can caramelize the sugar before adding it to the yogurt mixture. Heat the sugar in a saucepan over medium heat until it melts and turns golden brown, then quickly pour it into the yogurt mixture and whisk well.
