Preparation

1.In a large bowl, combine the fish sauce, soy sauce, oyster sauce, lime juice, honey, lemongrass, garlic, Thai chilies, ground coriander, ground cumin, and paprika. Mix well to create the marinade.

2.Add the chicken wings to the marinade and toss until they are well coated. Allow the wings to marinate for at least 1 hour, or overnight for maximum flavor.

3.Heat vegetable oil in a deep fryer or large pot to 180°C (350°F).

4.Carefully add the marinated chicken wings to the hot oil, in batches if necessary, and fry until they are golden brown and crispy, about 8-10 minutes.

5.Remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.
