1.In a large mixing bowl, combine the flour, yeast, sugar, and salt.

2.Add the warm water and coconut milk to the dry ingredients. Mix until a dough forms.

3.Knead the dough on a lightly floured surface for about 5 minutes, or until it becomes smooth and elastic.

4.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

5.Preheat the oven to 200°C (400°F).

6.Punch down the dough and transfer it to a greased baking sheet. Press it down gently to form a rectangular shape.

7.Sprinkle the chopped lemongrass evenly over the dough, pressing it down slightly.

9.Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown.
