Preparation

1.Heat ghee in a pressure cooker over medium heat. Add sliced onions and cook until golden brown.

2.Add minced garlic and grated ginger. Sauté for a minute until fragrant.

3.Add wheat flour and cook for a few minutes until it turns golden brown, stirring continuously.

4.Add Nihari masala, turmeric powder, red chili powder, and garam masala. Cook for a minute to release the flavors.

5.Add the boneless beef and beef shanks to the pressure cooker. Mix well to coat the meat with the spices.

6.Pour in water and season with salt. Stir to combine.

7.Close the pressure cooker lid and cook on high pressure for 45 minutes.

8.Allow the pressure to release naturally before opening the lid.

9.Stir the stew gently, breaking the meat into smaller pieces.
