Preparation

1.In a large skillet or paella pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

2.Add the diced bell peppers and cook for another 2-3 minutes until they start to soften.

3.Stir in the diced tomatoes, ground cumin, paprika, and turmeric. Cook for an additional 2 minutes to allow the flavors to meld together.

4.Add the rice to the pan and stir well to coat it with the spices and vegetables.

5.Pour in the chicken broth and coconut milk, and bring to a simmer. Cover the pan and cook for about 15 minutes, or until the rice is almost cooked.

6.Add the mixed seafood and white wine to the pan. Stir gently to combine all the ingredients.

7.Cover the pan again and cook for another 5-7 minutes, or until the seafood is cooked through and the rice is tender.

8.Remove the pan from heat and stir in the chopped cilantro and lime juice. Season with salt and pepper to taste.
