Preparation

1.In a medium saucepan, bring water to a boil. Add the guajillo chilies and cook for 5 minutes until softened. Drain the chilies and transfer them to a blender.

2.Add garlic, onion, and a pinch of salt to the blender. Blend until you have a smooth sauce.

3.In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the guajillo chili sauce and cook for 5 minutes, stirring occasionally.

4.Preheat the oven to 180°C (350°F).

5.Slice the Pambazo rolls in half lengthwise. Dip each half into the guajillo chili sauce, making sure to coat both sides.

6.In a separate skillet, heat 1 tablespoon of vegetable oil over medium heat. Place the dipped bread halves in the skillet and cook until crispy and golden brown on both sides.

7.In a bowl, mix the mashed potatoes, cooked chorizo, and salt to taste.

8.Take each crispy bread half and spread a generous amount of the potato and chorizo mixture on one side. Close the sandwich with the other half.

9.Place the filled Pambazo rolls on a baking sheet and bake in the preheated oven for 10 minutes.
