Preparation

1.Cook the pappardelle pasta according to package instructions until al dente. Drain and set aside.

2.Season the duck breasts with salt and pepper. Heat a tablespoon of olive oil in a skillet over medium-high heat. Add the duck breasts, skin-side down, and cook for 5-6 minutes until the skin is crispy and golden. Flip the breasts and cook for an additional 4-5 minutes until cooked to medium-rare. Remove from the skillet and let them rest for a few minutes before slicing.

3.In the same skillet, heat another tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

4.Add the ground cumin, ground coriander, paprika, and dried oregano to the skillet. Stir well to coat the onions and garlic with the spices.

5.Pour in the chicken or vegetable broth and coconut milk. Bring the mixture to a simmer and let it cook for 5 minutes to allow the flavors to meld together.

6.Slice the cooked duck breasts into thin strips and add them to the skillet. Cook for an additional 2-3 minutes to heat the duck through.

7.Add the cooked pappardelle pasta to the skillet and toss it gently to coat it with the sauce.
