Preparation

1.In a large mixing bowl, combine the flour and granulated sugar. Add the cold butter and mix until the mixture resembles coarse crumbs.

2.Gradually add the cold water and knead until the dough comes together. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 30 minutes.

3.In a separate bowl, mix together the shredded coconut, diced pineapple, grated ginger, Chinese five-spice powder, brown sugar, and salt. Set aside.

4.Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

5.Roll out the chilled dough on a lightly floured surface to a thickness of about 1/8 inch. Cut out circles using a round cookie cutter.

6.Place a spoonful of the coconut filling in the center of each dough circle. Fold the edges of the dough over the filling, creating a small pouch. Pinch the edges to seal.

7.Brush the tops of the Pardulas with beaten egg wash and place them on the prepared baking sheet.

8.Bake for 20-25 minutes, or until the Pardulas are golden brown.

9.Remove from the oven and let them cool for a few minutes. Dust with powdered sugar before serving.
