Preparation

  1. 1.
In a non-stick pan, heat the ghee over medium heat.
  2. 2.
Add the sweetened condensed milk and milk powder to the pan. Stir well to combine.
  3. 3.
Cook the mixture on low heat, stirring continuously to prevent it from sticking to the bottom of the pan.
  4. 4.
After about 10 minutes, the mixture will start to thicken. Add the cardamom powder and continue cooking, stirring constantly, until the mixture starts to leave the sides of the pan.
  5. 5.
Remove the pan from heat and let the mixture cool slightly.
  6. 6.
Grease your hands with ghee and take a small portion of the mixture. Roll it between your palms to form a smooth disc-shaped peda.
  7. 7.
Repeat the process with the remaining mixture.
  8. 8.
Garnish each peda with a sprinkle of chopped pistachios or almonds.
  9. 9.
Allow the pedas to cool completely before serving.

Treat your ingredients with care...

  • Condensed milk — Ensure you use sweetened condensed milk for the right level of sweetness in the peda.
  • Cardamom powder — For the best flavor, use freshly ground cardamom powder. You can grind whole cardamom pods in a mortar and pestle or use pre-ground cardamom powder.

Tips & Tricks

  • To achieve a smooth texture, make sure to stir the mixture continuously while cooking.
  • If the mixture becomes too thick, you can add a tablespoon of warm milk to loosen it.
  • For a variation, you can add a pinch of saffron strands to the mixture for a beautiful golden color and a subtle flavor.
