1.Preheat the oven to 200°C (400°F). Place the beef bones on a baking sheet and roast for 30 minutes until golden brown.

2.In a large pot, add the roasted beef bones, onions, garlic, ginger, cinnamon sticks, star anise, and cloves. Cover with water and bring to a boil. Reduce heat and simmer for 4-6 hours, skimming off any impurities that rise to the surface.

3.Strain the broth through a fine-mesh sieve, discarding the solids. Return the broth to the pot and add rice vinegar, fish sauce, sugar, and salt. Simmer for an additional 30 minutes.

4.Cook the rice noodles according to package instructions. Drain and set aside.

5.Divide the cooked rice noodles among serving bowls. Top with thinly sliced beef.
