1.In a large pot, add the chicken pieces, onions, garlic, ginger, cinnamon sticks, star anise, cloves, and chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour, skimming off any impurities that rise to the surface.

2.Remove the chicken pieces from the broth and set aside to cool. Once cooled, shred the chicken into bite-sized pieces.

3.Strain the broth to remove the solids, then return it to the pot. Add the fish sauce, soy sauce, and brown sugar. Season with salt and pepper to taste.

4.Cook the rice noodles according to package instructions, then drain and rinse with cold water.

5.To serve, divide the rice noodles among bowls. Top with shredded chicken and ladle the hot broth over the noodles. Garnish with fresh herbs, bean sprouts, lime wedges, and sliced chili.
