Ingredients
While the original Latvian Pīrādziņi are typically made with a yeast dough and filled with ingredients like bacon, onions, and potatoes, South American Empanadas have a different dough and filling. Empanadas are made with a flaky pastry dough and filled with a variety of ingredients such as ground beef, chicken, cheese, vegetables, and spices. Preparation

1.In a large mixing bowl, combine the flour and salt for the dough. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.

2.Gradually add the cold water and mix until the dough comes together. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 30 minutes.

3.In a skillet, cook the ground beef or chicken over medium heat until browned. Add the chopped onion, red bell pepper, garlic, cumin, paprika, chili powder, salt, and pepper. Cook until the vegetables are tender.

4.Stir in the tomato sauce and water. Simmer for 10 minutes, then remove from heat and let it cool slightly.

5.Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

6.On a lightly floured surface, roll out the dough to a thickness of about 1/8 inch. Use a round cutter to cut out circles of dough.

7.Place a spoonful of the filling onto each dough circle. Add a few slices of green olives and chopped hard-boiled eggs on top of the filling.

8.Fold the dough over the filling to create a half-moon shape. Press the edges together to seal the empanadas. You can crimp the edges with a fork for a decorative touch.

9.Place the empanadas on the prepared baking sheet. Brush the tops with beaten egg wash.

10.Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
